SOOTHE SUNBURN WITH TEA

If you get scorched, sponge the burn with cooled chamomille tea, which has anti inflammatory properties. To minimize peeling, make a paste of papaya, using a blender, and apply it to the affected area; the fruit contains an enzyme called papain that helps speed the healing process by breaking down dead skin and allowing new tissue to grow. You can also help prevent burns in the first place by eating tomatoes, which contain the antioxidant lycopene ( the highest concentrations are found in tomato paste, sauce, and juice). Research has found that lycopene helps the body protect itself against UV rays, possibly by neutralizing harmful free radicals.

SEARED SCALLOPS WITH LEEKS

Ingredients:

• 4 Young but, not baby leeksleeks, trimmed
• 12 scallops, roes on or off
• 1 tbsp light olive oil
• lemon wedges, to serve
• 250g pack butter , softened
• 1 red chilli , deseeded and finely chopped
• 2 garlic cloves, crusehd
• zest 2 lemon
• bunch parsley, leaves chopped, plus extra to serve

Method:

1. For the butter, mix all of the ingredients together in a large bowl, then beat well with wooden spoon until there are no lumps of butter left. Spoon onto a large sheet of cling film, then wrap tightly in a sausage shape. Chill until firm ( or put in freezer if you're short of time).
2. Set up a pan with a steamer or suspend a heatproof colander over the top of a pan. Cut the leeks in half lengthways, then slice into long strips, about the thickness of tagliatelle. Cover, then steam for 6 mins until tender, with no signs of squeakiness. Season, then set aside.
3. Dry the scallops on kitchen paper and season. Heat a heavy-based pan, then add the oil, Once hot, add the scallops, keeping them close together - this helps the sides to stay straight and tall rather than sagging. Sizzle for 2 mins until caramelised and you can see the heat creeping up the outside. Turn over with a palette knife, then fry for 1 min more. Take off the heat, then add a few good slices of the butter to the pan, spooning over the scallops as it melts.
4. To serve, wind a nest of warm leeks in the centre of 4 plates, tope each with 3 scallops, spoon over the buttery sauce (it looks smart trickled around the plate), then sprinkle with the remaining parsley. Squeeze overa little lemon juice befor you tuck in.

Know-how

The leftover butter will keep in the fridge for up to a week, or can be frozen in portions up to a month. try it tossed though pasta with crabmeat or prawns, or stirred through steamed green veg.

Our family and friends have been using Gloria’s Pharmacy for at least 13 years.  The MacKenzie’s highly

convenience store with many household items.  Another nice feature is greeting cards with

The history and ambiance of one of Puerto Penasco´s oldest restaurans is amazing. You´ll really enjoy

the wonderful atmosphere from the moment you walk in the door. Be sure to go upstairs and see t

he beautiful view and enjoy the outside dining areas. David and Jorge, waiters for several years always

give exceptional service and are so friendly you´ll want to go back to visit with them. David used to be

a bartender and he makes the most fabulous Mexican Coffee. I would go just for the coffee!

Their margaritas are king size, the menu is huge and the energy is fantastic!

Coco-cooling

To temper the effects of heat and humidity try the liquid from young coconuts; these are green not

brown. They make a fabulous cooling drink and are very refreshing even at room temperature. It also

makes a great smoothie mix with coconut chunks or flakes and toss in some cilantro for a cooling

beverage.

Sour, salty or pungent foods boost heat. Sweet, bitter or astringent foods cool you down. Other foods

to cool you down are dates, figs, pomegranates and raisins.

Next time you want lemonade swith to lime aid it´s more cooling. Always drink plenty of water to keep y

ou hydrated. When walking at the beach in Rocky Point be sure to have a cool beverage.

OREO COOKIE CAKE……………..A SPECIAL TREAT FOR YOUR

CHILDREN BEFORE THEY GO BACK TO SCHOOL

Fudge cake mix, chocolate milk and mini chips make this mouthwatering dessert a real crown pleaser

Ingredients:

• 1 pkg (18.25 oz) dark chocolate fudge cake mix
• 1 cup chocolate milk
• 1 cont. (8 oz) sour cream
• 3 eggs
• 1 cup mini chocolate chips
• 1 1/2 cups butter, at room temperature
• 6 cups confectioner´s sugar, from 2 (1-lb) pkgs.
• 1/3 cup milk
• 2 tsp. vanilla extract
• 16 Oreo cookies

Preparation:

Preheat oven to 350 F. Coat 2 (9") round cake pans with cooking spray. On low speed, beat cake

mix, chocolate milk, sour cream and eggs until blended. On medium speed, beat 2 minutes. Sir in

mini chips. Divide evenly between pans. Bake 25'30 minutes or until toothpick inserted into centers

comes out clean. Cool 20 minutes. Transfer from pans to racks; cool completely.

On medium speed, beat butter until light and fluffy, 2 minutes. On low, gradually beat in confectioner´s s

ugar until combined. Add milk and vanilla; on medium-low, beat until fluffy, 2 minutes.

Chop 4 cookies. Combine 3/4 cup frosting with chopped cookies. Place one cake layer on serving

plate; spreat with cookie frosting. Top with remaining cake layer. If desired, transfer 2/3 cup frosting t

o pastry bag fitted with star tip. Spread cake top and side with remaining frosting. Pipe rosettes onto

cake. Halve remaining cookies. Garnish cake with cookie halves.

STRAWBERRY SALSA RECIPE

Strawberries are mixed with bell peppers, onions, orange juice, lime juice, cilantro, and a touch

of spiciness. Serve with grilled fish, shrimp or chicken  or as an appetizer with toasted pita triangles.

Ingredients:

• 1/2 medium red onion, thinly sliced
• 1 jalapeno pepper, minced
• 1/2 red bell pepper, stemmed, seeded, and julienned
• 1/2 yellow bell pepper, stemmed, seeded and julienned
• 1/2 green bell pepper, stemmed, seeded and julienned
• 1/4 cup finely shredded fresh cilantro leaves
• 1/2 pint (1 cup) fresh strawberries, hulled and sliced
• 1/4 cup fresh orange juice
• 2 tablespoons fresh lime juice
• 2 tablespoons extra virgin olive oil
• Salt and freshly ground black pepper

Preparation:

Place red onions, jalapeno peper, bell peppers, cilantro, strawberries, juices, oil, salt and pepper in a l

arge mixing bowl and toss to combine. Cover and refrigerate at least 2 hours or up to 4 hours.

Fifteen minutes before serving, remove the salsa from the refrigerator, so it loses some of its chill.

This sweet summery salsa can accompany anything from toasted pita triangles to a cut of grilled fish,

shrimp or chicken.

No Solo Agua at the entrance of the Old Port.

“Sea of Cortez-Mediterranean fusion cuisine”

Hector and Blanca Martinez new restaurant by the sea opened only 6 weeks ago.  No Solo Agua’s goal is to be the “signature” restaurant for everyone in Rocky Point.  With a combination of “El Tintero Hangout” Seafood, “Café Leche” for coffee and “Peri, Peri” which includes pizzas and sandwiches.  “No Solo Agua” offers a “specialty” for everyone.  You can have a casual drink (try their café con leche it’s a bit of Starbucks right here in Rocky Point) lunch by the sea, or a romantic dinner in the continental style indoor dinning room.

The Chef’s specialty of the day is a must try.  For $60 pesos (equivalent to $6 usd) you get a dinner salad, an entrée which comes with fresh baked bread and dessert .

You’ll hear Hector ringing the bell for ships coming into the port.  You’ll feel his dream coming alive when you experience the spirit of the old port which says come relax with me, enjoy the sea, experience the flavors and return often to “No Solo Agua” .

It was a fun afternoon.  With Chef Tony in the courtyard serving exquisite carne asada tacos and Cristy from El Conchal in the kitchen making delicious “governor” style shrimp tacos to set the scene while everyone was having margaritas and cold beer on the patio.  Washer games were being played in the sand You could feel everyone’s love for our special Playa Encanto community.
